Instead of a fancy lunch, we had a choice of simple (and environmentally friendly) brown bags, all labeled with various sandwich names. Rather than impulsively grab the traditional "ham and cheese" or "chicken salad" fare (curried, I might add), I dug into the "turkey and brie" bag. I love brie with "anything" sandwiches, but brie with... turkey? I pulled out the neatly wrapped sandwich. Humm... sliced raisin bread with walnuts. I looked closer and detected the edges of a delicious cranberry sauce oozing from the top of the brie. It reminded me of my own stuffing recipe, rich with sweet and sour flavors as well as walnuts and apples for balance and texture. It looked so good that, well... I grabbed a second sandwich bag. I later split that second meal with one of my guests at the conference, who then split it with her neighbor. I noticed on our way out that all the turkey and brie bags were gone (sorry, curried chicken salad.) 'Quite the hit of the conference! What truly made this combination of ingredients special was the fresh, soft raisin walnut bread. You may add lettuce and tomato if you wish, but the turkey, brie, cranberry and raisin-walnut combination needs no trimmings. Ingredients: - Sliced raisin-walnut bread (toasting is optional as it makes the bread drier.) - Turkey leftovers, sliced thin - Cranberry sauce (jelly or whole) - Brie or Camembert cheese, sliced and at room temperature - A little salted butter for each slide (optional) Preparation: - Layer ingredients: slice, turkey, brie, cranberry and top slice. - Microwave for 10-15 seconds, especially if you prefer a softer brie. - Make extra sandwiches. Your neighbors and friends will want yours! |
